This wine is 100% Chardonnay. The colour is a lovely pale lemon or a light straw yellow with greenish reflections. The nose is fresh, showing notes of fresh citrus, white flowers, green apple, and discreet minerality. There is also an open style that can be characteristic of unsulphured wine, with only a hint of wood. On the palate, the wine is elegant and authentic, offering a precise structure and remarkable mineral tension. Tastes include a lively acidity, crisp pear, and lemon zest, with a subtle hint of hazelnut. The wine shows delicate fruit and measured richness, backed by generous fruit and a fabulous long finish. This is a refined Chardonnay with great complexity, a result of the cool climate and the old vines (about 85 years old) in the single vineyard of ‘La Combe Bazin’. It is drinking well now but will benefit from two to three years of cellaring. The wine is often vinified with no added sulphites (Sans Sulfite Ajout), highlighting the natural expression of the terroir.
The wine’s refreshing acidity and delicate minerality make it an excellent match for delicate fish that is pan-fried or steamed. Suggested pairings include seafood such as oysters and mussels, or poached fish with lemon butter. It is also highly recommended with creamy, soft cheeses like Camembert or Brillat-Savarin, whose texture is well balanced by the wine’s slightly mineral acidity. This pairing highlights the wine’s depth and character.
