The Colas Robin cuve is named after a historic lieu-dit in the village of Polisot, where Piollot Pre & Fils cultivates Pinot Noir vines farmed biodynamically. This zero dosage Champagne is crafted exclusively from a single vintage (though labeled NV) and aged sur lattes for a minimum of three years to enhance complexity and depth. Fermentation takes place with native yeasts, and malolactic fermentation is allowed, lending balance to the otherwise austere profile.
Its aromatics are layered and expressive: cranberry, redcurrant, and rose petal interplay with notes of chalk and dried citrus. On the palate, its taut and tensile, with a vibrant acidity and a savory, umami-rich undertone that brings depth without weight. The absence of dosage highlights the purity of the fruit and the kimmeridgian-limestone soils of the Aube.

Piollot Pre & Fils, based in the southern Champagne village of Polisot in the Cte des Bar, is helmed by Roland Piollot, a fifth-generation vigneron, and his wife Dominique Moreau (also of Marie Courtin fame). Since 2009, the estate has been certified organic and biodynamic, emphasizing biodiversity, soil health, and minimal intervention both in the vineyard and in the cellar.
Their Champagnes are true grower wines: site-specific, single-varietal, and often single-vintage, reflecting a commitment to transparency and the unique voice of each parcel.
