A blend of 40% Pinot Noir, 40% Chardonnay, and 20% Aligot from vines that average 20 to 50 years in age. The fruit is sourced from Cte de Beaune, Cte de Nuits, and Hautes Ctes de Beaune.
Whole cluster pneumatic pressing, alcoholic and malolactic fermentation in stainless steel tank, unfined, unfiltered. Liqueur de tirage & liqueur d’expdition: homemade with own base wine and cane sugar. Riddling by hand. The wine rests sur lie for about 36 months. Disgorged at least 60 days before shipment.

Parigot & Richard has been producing fine Crmant in Burgundy for five generations, and remains one of the very few domaines that focuses exclusively on these wines. Located in Savigny-ls-Beaune, with vineyards in both the Cte de Nuits and the Cte de Beaune, Parigot is today directed by Grgory Georger, the current generations torchbearer. He adheres precisely in every respect to the traditional Mthode Champenoise, from hand-harvesting, pressing and fermentation, even hand-riddling.
