Colour, Aroma, Palate: The bouquet is ripe and lively, offering notes of stone fruit, tangy touches of bergamot, and warm scents of summer harvest and brioche. Smokier, more mineral accents, and tertiary nuances like iodine, lemon oil, tangerine, and oyster shell also complete the aromatic profile. The palate has a vibrant opening, showcasing richness, complexity, and a refined structure. Flavours of baked peach, lime blossom, brioche, salted almond, and spun honey are wrapped around sleek, mouth-watering acidity.
Body and Finish: It is medium to full-bodied, satiny, and textural, with a fine, youthfully boisterous mousse. The length is long, precise, and mouthwateringly saline, featuring touches of bitterness, liquorice notes, and toasted malt.
Varietal Composition and Optimal Drinking Window: The varietal composition is a blend of Chardonnay and Pinot Noir, with the P2 2000 being approximately 52% Chardonnay and 48% Pinot Noir. The Champagne was aged for about 16 years on the lees before disgorgement in 2017. While drinking beautifully now, with notable complexity, the optimal drinking window is generally considered to be now through 2030.
