Introduction
Clos Cibonne is a historic Provenal estate with roots dating back to the 18th century. Family-owned for generations, it holds the prestigious Cru Class designation and is renowned for championing the rare Tibouren grape. Overlooking the Mediterranean, the vineyard benefits from cooling sea breezes and a unique microclimate that shapes the estates distinctive ros style. The winerys philosophy blends tradition with minimal intervention, producing age-worthy ross of remarkable character.
Wine Description
The 2023 Clos Cibonne Ros Cuvee Tradition displays a delicate salmon-pink colour with a coppery hue. Aromas reveal layers of dried strawberry, blood orange zest, Mediterranean herbs, and a subtle saline lift. On the palate, it offers medium body with a textured, almost savoury depth, underscored by flavours of peach skin, thyme, citrus rind, and gentle spice. Aged for 12 months under a thin layer of yeast (fleurette) in large century-old oak casks, the wine gains a distinctive umami nuance and remarkable persistence. The finish is long and complex, balancing freshness with a lingering herbal-mineral note.
Food Pairing
Ideal alongside Provenal classics such as pissaladire, bouillabaisse, and salade nioise. It also complements tomato-based pasta, grilled prawns, and aged cheeses. Together, they create an unforgettable dining experience.
