This pt-nat is made from Montnega, a high-altitude biotype of Parellada, grown on limestone soils at 600 meters above sea level in the Serra de lHome range of Catalonia. Hand-harvested and farmed biodynamically, the grapes are pressed gently and fermented with native yeasts. Bottled before fermentation completes, the wine captures its natural sparkle in the ancestral method, with no dosage, fining, or filtration. The result is a vivid expression of mountain terroirdelicate citrus, white flowers, fennel, and wet stone wrapped in a lively, lightly creamy mousse.
The 2024 vintage is particularly pure and brisk, carrying Montnegas hallmark finesse and mineral edge. Ideal as an aperitif, it pairs beautifully with oysters, anchovies, or fresh goat cheeses.
Can Sumoi is the Peneds-based natural wine project of Pepe Ravents and Francesc Escala, launched in 2017 with the mission of reviving ancient high-altitude vineyards and crafting wines of authenticity and transparency. The estates 400-year-old farm sits on rugged limestone soils, where indigenous varieties are farmed biodynamically without irrigation, herbicides, or chemical inputs.
In the cellar, the approach is equally minimalist: spontaneous fermentations, no additives, and low intervention, allowing the wines to express the freshness and wild character of their mountain origins.
