Vaccarse is a rare grape variety, traditionally found in Chteauneuf-du-Pape, with just over 10 acres planted there. The Old Oak Vineyard, located in the Paso Robles Willow Creek District, is one of only two vineyards in North America cultivating this variety. In 2023, the Vaccarse grapes underwent a 14-day maceration with 50% whole cluster inclusion. Post-fermentation, the wine was aged for 10 months in neutral French oak barrels. The vineyard spans 21 acres at an elevation above 1,300 feet, featuring heavily calcareous soils, and is dedicated to organic, dry-farmed viticulture.
