Beneath Our Feet is Olifantsbergs philosophical reda blend designed to express the geological complexity of its mountainous vineyard site. The 2023 vintage blends Grenache Noir, Syrah, and Mourvdre, with each variety contributing nuance and structure. Grenache brings brightness and red fruit energy; Syrah adds spice, depth, and savory tension; Mourvdre grounds the blend with earthy complexity and a firm mineral line.
Grapes were harvested by hand from dry-farmed bush vines rooted in decomposed shale and sandstone soils. Fermentation was done with native yeasts in small open-top fermenters, with around 40% whole-bunch inclusion to build aromatic lift and tannic texture. Each component was vinified separately and matured in a combination of neutral 500L oak barrels and concrete tanks for 10 months before final blending.
Minimal intervention in the cellar allows the soil signaturelithe tannins, cool freshness, and rocky finesseto shine. This is a blend of intention rather than power, made for those who value transparency, texture, and terroir.
