LOlivet is a classic southern Rhne blend, composed primarily of Grenache, with Syrah and Mourvdre rounding out the profile. The fruit comes from vineyards in and around the village of Sablet, which is nestled between Gigondas and Sguret in the foothills of the Dentelles de Montmirail. The soils here are sandy and limestone-rich, contributing to the wines finesse and aromatic lift.
The 2022 vintage was marked by warm, dry conditions with ideal ripening for Rhne varietals. Grapes were harvested at optimal maturity and fermented in concrete and stainless steel to preserve purity and freshness. Aging was done in large neutral vats, allowing the terroir and blend to speak clearly without oak influence.
LOlivet is a versatile food wine, pairing beautifully with Provenal dishes, grilled lamb, charcuterie, or roasted vegetables with herbs. Its equally enjoyable on its own, offering serious depth without heaviness.
Domaine Notre Dame des Pallires is a multi-generational, family-run estate with deep roots in the southern Rhne. Today, cousins Jean-Pierre and Claude Roux, along with their children, uphold the estates legacy, farming traditional Rhne varieties across prized appellations such as Gigondas, Sablet, and Rasteau.
