de Nit is a singular sparkling ros composed of Macabeu, Xarello, and Parellada, with a touch of Monastrell for color and aromatic lift. All grapes are estate-grown on biodynamically farmed vineyards around Sant Sadurn dAnoia, on limestone-rich soils that impart energy and minerality. The wine is made using the traditional method, with second fermentation in bottle and over 18 months of lees aging for added texture and complexity. Dosage is kept low to preserve the precision and brightness of the wine.
