Crafted from a blend of 55% Macabeu and 45% Xarello, this organic sparkling wine originates from vines over 30 years old, cultivated across 32 distinct plots in the heart of Peneds. The vineyards are managed organically, emphasizing sustainability and a deep connection to the terroir. Following the traditional method, the wine undergoes secondary fermentation in the bottle and is aged on its lees for a minimum of 20 months, enhancing its complexity and depth. The result is a sparkling wine that beautifully reflects its heritage, offering a harmonious balance of fruit, minerality, and subtle autolytic notes. This versatile wine pairs excellently with a variety of dishes, including baked whitefish, grilled poultry, and rice dishes with seafood.
