Made primarily from Pinot Noir with a small percentage of Chardonnay, the 2021 Blanc de Noirs is crafted using the traditional mthode champenoise and sourced from cool-climate vineyards across North Coast appellations including Sonoma, Mendocino, and Marin counties. This regional diversity allows for complexity, freshness, and depth in the final blend.
Hand-harvested fruit is whole-cluster pressed, with only the most delicate juice used to maintain clarity and finesse. A portion of the base wine is aged in neutral French oak to enhance texture. After secondary fermentation in bottle, the wine is aged en tirage for nearly two years, gaining richness and autolytic complexity. Aromas of red apple, wild strawberry, candied orange peel, and hazelnut unfold on a palate that balances roundness with precision.
Versatile at the table, it pairs beautifully with duck pt, smoked salmon, creamy mushroom dishes, or roasted poultry.
