Crafted entirely from Chardonnay grown in the cool-climate slopes of Bot River, this vintage Cap Classique is a testament to terroir-focused precision. The grapes are hand-harvested and whole-bunch pressed, followed by fermentation in stainless steel tanks to preserve freshness. A portion undergoes partial malolactic fermentation for balance and texture. After tirage, the wine spends 36 months on the lees, building depth and complexity before disgorgement.
The nose reveals chalky minerality with delicate citrus blossom and brioche notes. On the palate, it shows impressive clarity and finessegreen pear, lemon pith, and flinty acidity evolve into a layered finish with hints of almond skin and wet stone.
