ABOUT THIS WINE

100% Nebbiolo from Three of Scavinos best terroirs: mainly Rocche di Castiglione vineyard (in Castiglione Falletto) blended with smaller percentages of Cannubi (in Barolo) and the Fiasco vineyard (in Castiglione Falletto)

Harvested by hand, normally after the 10th of October. Separate vinification of each single vineyard in stainless steel. Submerged-cap maceration (10-12 days in average). Fermentation (20-30 days in average) are in stainless steel with temperature controlled and indigenous yeasts. Malolactic fermentation in 225 L barrels over the winter

The three single vineyards are aged separately in neutral French oak barrels for 12 months and further 12 months in large casks. Blended and aged 8 months in stainless steel followed by 6 months in bottle.

Note: The last year of production of Barolo Carobric will be 2018 as the 2018 was also the last harvest in the Cannubi vineyard. The Barolo Carobric since its first vintage, 1996, has been the same blend. Losing the rest of Cannubi vineyard, we decided to not replace it in the blend of the Barolo Carobric with another vineyard. Therefore, the decision to interrupt the production of Carobric to keep the identity of this wine, result of a specific blend.

ABOUT THIS PRODUCER

Paolo Scavino is an historical winery in the Barolo region. It was founded in 1921 in Castiglione Falletto from Lorenzo Scavino and his son Paolo. Farming has always been a family tradition and passion.

Enrico Scavino together with the daughters Enrica and Elisa, fourth generation, run the family Estate. He started to work full time in the winery in 1951 when he was 10 years old. A young winemaker who inherited the passion and devotion for the land he belongs to. Through over 60 years of experience his focus has been to invest on important cru of Nebbiolo to show the uniqueness of each terroir.

Their work is inspired by the love and respect they have for their territory and they pursue purity of expression, complexity and elegance for their wines from the three local grapes Dolcetto, Barbera and Nebbiolo.

These values and culture have been carried on and never changed.
