From sloping vineyards around Bziers, the southwestern community in Frances Languedoc-Roussillon region, this light pink bottle features pretty floral aromas, with notes of watermelon, raspberry and pear. The grapes for this wine are hand-harvested and fermented individually with native yeasts before being blended for the final wine. The palate is intriguing, with a definite salty tang balanced by soft fruit flavours of pear, orange, tangerine and a bit of cedar. It is both refreshing and interesting. It is dedicated to Sophie Valrose, a female vineyard worker who, in the 19th century, fought to improve the working conditions for the many women employed in the vineyards.
Steelhead trout, pork or shrimp would be great matches.
