The Bibi Graetz winery was founded in 2000 in Fiesole, overlooking Florence, by Bibi Graetz, an artist who transitioned to winemaking. The winemaking philosophy is rooted in a deep respect for indigenous Tuscan varieties like Sangiovese and the use of old vines.
Wine Description
The wine has a relatively light, vibrant ruby or bright cherry red colour, with some notes mentioning a pale-garnet hue. The aromatic profile is complex and constantly evolving, offering an attractive combination of dried fruit and spices, black cherries, plums, and raspberries. You may also find aromas of flowers and fragrant sandalwood, perfumed blue flower, candied orange peel, wet earth, and hints of Tuscan brush. On the palate, this full-bodied wine shows a remarkable elegant character with flavours of juicy Marasca cherry, crushed raspberry, redcurrant, and a savoury edge.

Food Pairing
The savoury notes and firm structure stand up well to the richness of red meat and enhance the wines overall finesse.
