The Table Ronde is a Grand Cru Blanc de Blancs Champagne crafted exclusively from Chardonnay grown in the prized chalk soils of Cramant, a Grand Cru village in the Cte des Blancs. This cuve is composed of a blend of reserve wines (solera-style perpetual reserve begun in 2003), offering both freshness and depth. The wine is vinified partially in stainless steel and partially in neutral oak to build mid-palate texture without masking its mineral edge. It is aged for extended time on the lees in bottle (typically 56 years) before disgorgement and finished with a low dosage (Extra Brut, around 23 g/L), preserving its linear profile and site expression.
The result is a Champagne of detail and quiet intensity. Expect citrus zest, chalk dust, toasted brioche, and subtle hazelnut, all riding on a palate of fine bubbles and crystalline structure. The long lees aging lends subtle autolytic depth, while the low dosage ensures clarity and length.
