Grains de Celles is drawn from sustainably farmed vineyards in Celles-sur-Ource, Cte des Bara region prized for its Kimmeridgian marl soils. The cuve typically includes 50% Pinot Noir, 25% Chardonnay, and 25% Pinot Blanc, a rare varietal in Champagne that lends roundness and floral lift. Fermented and aged entirely in stainless steel, with malolactic fermentation completed, the wine rests on its lees for around 30 months before disgorgement. The Extra Brut dosage allows the vibrant citrus, orchard fruit, and chalk-driven minerality to shine through. In magnum, the wine gains additional textural richness and aging capacity, making it a stellar companion for celebratory mealsthink shellfish towers, roasted poultry, or aged cheeses.
Pierre Gerbais is a fourth-generation grower-producer located in the Cte des Bar, a region once overlooked but now celebrated for its expressive terroirs and dynamic vignerons. Aurlien Gerbais leads the domaine with a strong commitment to environmental stewardship, using cover crops, eliminating herbicides, and preserving old vine genetics, particularly Pinot Blanc from massal selection. The estates approach is rooted in transparency and site expression, emphasizing precision over intervention. Gerbais Champagnes, especially in magnum, capture the soul of the Aubevibrant, structured, and alive with place.
