“Chromatique” is made from 100% Chardonnay sourced from Stphane Regnaults organically farmed Grand Cru vineyards in Le Mesnil-sur-Oger and Oger, in the heart of the Cte des Blancs. The wine blends several parcelseach with a unique aspect and soil compositionto achieve a layered and expressive profile. About 30% of the blend is fermented in used oak barrels, the remainder in stainless steel, with native yeast fermentation and natural malolactic allowed where appropriate.
Aged for at least 24 months on its lees and finished with a minimal dosage of 2 g/L, this Extra Brut cuve emphasizes tension and transparency. Expect aromas of lemon peel, crushed stones, and hints of white peach, with a sleek texture and persistent mineral finish. It pairs beautifully with oysters, raw scallops, or lightly grilled white fish, and also serves as a sophisticated aperitif.
Stphane Regnault brings an unconventional and multidisciplinary background to Champagne. Formerly an aerospace engineer and jazz saxophonist, he returned to his family vineyards in 2007 and has since become a respected grower-producer with a thoughtful, terroir-driven approach. His estate covers 4 hectares of old-vine Chardonnay in Le Mesnil and Oger, farmed organically with biodynamic influences since 2012 and certified organic in 2020.
Each of his cuves is named after a musical scale, reflecting his belief that wine, like music, expresses both structure and emotion. Chromatique embodies the full spectrum of his vineyards, uniting multiple parcels into a wine that is vibrant, resonant, and intricately composed. Regnaults style is one of precision and purity, focused on letting each terroir speak clearly with minimal intervention.
